Kancheepuram Idly





Ingredients :

1.Raw rice - 1 Cup
2.Idly Rice - 1 Cup
3.Urad dhal - 1 Cup
4.Channa dhal/Bengal gram - 1 tsp
5.Urad dhal - 1 tsp
6.Mustard - 1 tsp
7.Ginger - 2 tsp(finely chopped)
8.Red Chilly - 5
9.Pepper - 1 tsp
10.Curry leaf - Small qty
11.Salt - Needed qty
12.Oil - 1 tbs
13.Ghee - to grease idly plates

Procedure :

1. Wash and soak raw rice and idly rice together for about 3 hours.

2. Wash and soak urad dhal for an hour before you start grinding.

3. Grind the rice and urad dhal separately.The batter should not be too watery.Take care while adding water.

4. Rice should be ground to coarse consistency.

5. Add salt and mix well.

6. Allow the contents to ferment for about 8 hours.

7. In a pan add oil and heat it.Add channa dhal, urad dhal, mustard, pepper, ginger, red chilly and curry leaf.

8. Fry well and mix it to the fermented batter.

9. Grease the idly plate with ghee before you start making idlies.

10. Once the cooking is done, leave the plate to cool down.Then take out the idlies.
