Beetroot and Colacasia(seppankezhangu) Kofta Briyani

So, just to celebrate this I have a very special rice to share with you. It is a beautifully coloured Beetroot and Colacasia Kofta Briyani. This rice tasted so good with yummy koftas..Hope you'l also love this...Although, it is time consuming it is worth trying...

Ingredients:

For Kofta,

1. Colacasia - 2 (Big sized)
2. Beetroot (Grated) - 1/4 Cup
3. Carrot (Grated) - 1/4 Cup
4. Onion (Finely Chopped) - 1/4 Cup
5. Garam Masala - 1 tsp
6. Red Chilly Powder - 1 tsp
7. Salt - Needed qty
8. Rice Flour - 1/2 Cup
9. Oil - For frying

Koftas Before Frying:



Procedure:

1. Cook Colacasia till soft. Remove skin and mash well.
2. Mix all the other ingredients except oil and make it like a chappathi dough.
3. Make balls and deep fry in oil.
4. Keep aside.

Fried Koftas:



For Rice,

Ingredients:

1. Basmati rice - 1 Cup
2. Beetroot - 1/2 Cup (Cut Pieces)
3. Onion - 1/2 Cup (Finely Chopped)
4. Ginger - 1 inch piece
5. Garlic - 4 cloves
6. Green Chillies - 3 or adjust to you taste
7. Garam Masala - 2 tsp
8. Coriander - 1/4 Cup (Finely Chopped)
9. Ghee - 2 tsp
10. Oil - 5 tsp
11. Salt - Needed qty



Procedure:

1. Grind ginger, garlic, small qty of onion and green chillies. Keep this masala aside.
2. In a pan, add ghee and fry beetroot till raw smell goes. Keep aside.
3. Now, add oil and then add ground masala. Fry till thet turn golden brown.
4. Add, onion and fry well. Now, add the fried beetroot.
5. Add salt, garam masala and washed basmati rice. Mix well.
6. Keep as such for few minutes in low flame.
7. Transfer to rice cooker. Add water (I used 2 cups of water for 1 cup of rice. Also, I didn't soak Basmati rice before)
8. Once the rice is cooked, open the lid and add the koftas and coriander. Mix well.
9. Close the lid. After few minutes, serve the rice with any raita.
