Today, My sister is celebrating her Birthday. Many More Happy returns of the Day Dear:-)
This Thengai Bun, which is our favourite is nothing but, a coconut and nuts mixture sandwiched between two thin layers of bread. I still remember the days, how much we used to get excited when we hear the bakery man's tri-cycle bell. He used to sell all baked products at our door step. He would never move to next door until we buy something from him. It was like a everyday routine. Though we buy, cup cakes one day and the plum cakes or puffs other day, the one which was in our regular buy list was this "Thengai Bun". If you have told me that one day, I would bake my own Thengai Bun, I wouldn't have believed it!
I have one memory related to this Bun. I used to eat the coconut mixture and would give the bread part alone to my sister. She never complained about that. Though, she was fond of eating the whole thengai bun as such, she was very kind and nice enough to her little sister. Not only this thengai bun but in all cream biscuits I do the same thing. I'm really lucky to have a sister like her.
Ingredients :
1. All purpose flour - 1.5 cups
2. Active dry yeast - 1 pack
3. Milk - 1/4 cup (Warm)
4. Water - 1/4 cup (Warm)
5. Sugar - 1/4 tbs
6. Salt - 1/2 tsp
7. Oil - 1/8 cup
For stuffing :
1. Coconut - 1 cup to 1.5 cups (Grated)
2. Mixed nuts - 1 tbs
3. Raisins - 1 tbs
4. cardamom powder - 1/2 tsp
5. Sugar - 1 tbs
6. Ghee - 2 tsp
Heat a pan. Add ghee. Roast the nuts and raisin. Add coconut and fry for few seconds. Switch off the stove. Add cardamom powder. Mix well. When the mixture is completely cooled, add sugar and keep aside.
Procedure :
1. Take sieved flour in a wide vessel.
2. Combine oil, sugar, salt, water and milk. Mix well once and then add yeast. Leave it as such for 10 minutes or till the mixture becomes frothy.
3. Add this mixture to the flour. Make a smooth dough.
4. Keep it covered with a damp kitchen towel for about an hour.
5. By now, you can see the dough doubled in size.
6. Gently knead the dough. Divide it in to two equal parts. Make two balls.
7. Dust the work surface with flour.
8. Take one ball and roll out it in to 1/4 inch thickness using rolling pins. Prick some holes using fork.
9. Place the coconut & dry fruits mixture on it.
10. Now, roll out the remaining ball in to same 1/4 inch thick. Prick holes. Place it on the top of the coconut & dry fruits mixtures.
11. Fold the edges together without any gap.
12. Place this gently on a lined and greased cookie sheet.
12. Meanwhile pre-heat oven to 425 F.
13. Bake for about 15 minutes. Once baked, take out and immediately apply some butter on the top.

14. When it is warm, cut it in to pieces.
15. Serve warm. Warm coconut buns(Thengai bun) tastes great:-)

What a unique preparation,never had the fortune of trying this in my part of the world. It looks and sounds so rich with coconut and dry fruits ,my favorite ingredients. Wish your sister a very happy birthday:)!!!
